This is the second post in this new feature 5 for $25- Dinner On A Budget. You can read my introduction and how it works here. Each of these meals should feed at least 3 adults hearty portions!
Meal 1: Broccoli, Chicken, Rice, and Cheese Casserole
1 can Campbell’s Cream of Chicken Soup (free)-see instructions on Grocery List
1 bag Meijer frozen broccoli ($1.19)
1 bag Kraft Shredded Cheddar Cheese ($1.88)
1 bag Meijer Brown Rice ($1.49)
1 bag Meijer Boneless Chicken Breast Tenders 64oz ($7.99)
1/2 onion finely chopped- buy 1 large onion ($1.00)
Total: $13.97 (We will be using these ingredients in other meals!)
1 lb frozen chicken tenders cooked and chopped
1/2 onion, finely chopped and sauteed
1 pkg of frozen broccoli, cooked and drained
1 can cream of chicken soup
3 cups of brown rice cooked by package directions
1 1/4 cup shredded cheese
Mix all ingredients together reserving 1/4 cup of shredded cheese. Put in a greased baking dish and sprinkle rest of cheese on top. Cover with foil.
Bake at 350 for 20 minutes. Remove foil and bake another 5-15 minutes until cheese is bubbly on top.
Meal 2: BLT Sandwiches and Tomato Soup
1 16 oz package of Hormel sliced bacon ($2.49)
1 tomato ($.75)
1 head lettuce ($.88)
1 loaf of Pepperidge Farm Whole Grain Bread ***
1 can Campbell’s tomato soup***
Bake the bacon using instructions here (I would bake the whole package for easier dinner prep the rest of the week.).
Cook soup according to can directions. Toast bread if desired, and layer on bacon, tomato slices, and lettuce. Serve with soup.
Meal 3: Grilled Chicken Salad and Grapes
1 bag Dole Family Classic Romaine Salad ($1.49)
1 lb of frozen chicken tenders ***
Shredded cheese ***
1/2 tomato chopped***
Value Time Italian Dressing ($.99)
1 1/2 lbs red seedless grapes ($1.50)
1/4 onion chopped
Grill or bake chicken in oven. Serve on top of lettuce with tomatoes, cheese, and onion.
Meal 4: Breakfast for dinner: Southern scrambled eggs, Bacon, Toast, Grapes
1 dozen large eggs ($.98)
1 tomato – chop only half ($.75)
1/4 onion chopped ***
Shredded Cheese ***
Use at least two eggs per person and whisk with 1 TB of water for each two eggs. Spray skillet with nonstick spray and heat over medium. Add eggs, bacon, and tomatoes. Cook until fluffy and eggs are no longer runny. Sprinkle with cheese. Serve with bacon slices, toast, and grapes.
Meal 5: Baked Italian Chicken, Rice and Veggies
1 lb or more of frozen boneless chicken tenders***
1 bag Meijer Frozen Vegetables (your choice) ($1.19)
Put frozen tenders in crockpot and dump 1/2 bottle of Italian dressing on top. Let cook on low until done (usually 5-7 hours) or high (3-4) hours. Watch carefully so they do not get overdone- time tends to vary based on crockpot. Cook rice and veggies according to package directions. Serve chicken over rice and veggies.
